  1. Substitute thinly sliced potatoes for the cauliflower then you might have something hell substitute with mushrooms or broccoli a you have something but that cauliflower has got to go other wise you have wasted the cheese

  2. Guys, if you follow the recipe perfectly there will be way too much sauce and it’s watery from the cauliflower. I use a roasting pan with 2 heads and toss the cauliflower in oil, salt and pepper and roast for about 20 minutes mixing them halfway through. This method dries out the cauliflower preventing the watery sauce. And use the same amount of cheese and cream for double the amount of cauliflower. Comes out perfect every time.
